Olive oil is a food oil extracted from the olives, the fruits of the olive plant. The virgin oil type is derived from the mechanical squeezing of the olives.

Olives are traditionally harvested (in Italy from mid-October to late December) on nets, in some regions by cutting branches with flexible sticks, so as to cause the fruits to disappear, or in others, expecting full ripeness and therefore their fall Natural from the plant.
