The internal grain and the maturation guarantee the same sensation you get when you taste the fresh truffle. The sterilization treatment to which the jars are subjected changes the color of the grain in the Carpaccio, which is generally white in fresh truffles, making it uniform with the color of the pulp of the truffle.
